Orange Sesame Wings

2-3 lbs chicken wings
2-3 oranges, juiced
1 tsp red pepper flakes
1 tsp garlic granules
2 tsp sesame seeds
2 Tbsp coconut oil

Lay raw chicken wings in a single layer baking dish
Bake at 425 for 15 minutes

While the wings are baking, juice your oranges and remove any seeds
Add the red pepper flakes and garlic granules into a large mixing bowl
Mix well

Remove the wings from the oven and put into the mixing bowl with the orange mixture
Add the coconut oil
Stir around until the coconut oil is melted

Put the wings back into the same baking dish
Pour any leftover mixture over the wings
Sprinkle the wings with the sesame seeds

Continue to bake at 425 for another 15 minutes
Remove from oven and let sit for a few minutes before serving

Serve and enjoy!

Lemon, Garlic and Rosemary Wings

Juice from 3 lemons
Slices of rind from approximately 1/2 a lemon
6-7 cloves of garlic, chopped
2 Tbsp dried rosemary
3 lbs chicken wings

Mix garlic, lemon juice, rosemary and bits of lemon rind together in a large bowl
(can use a food processor to blend)

Pat the chicken wings dry with a paper towel
Add chicken wings to the garlic, lemon and rosemary mix
Mix well

Spread wings on a foil-lined baking sheet, as single-layered as possible

Bake at 450 for approximately 15 minutes
Remove from oven and flip/stir/turn wings over

Put back in the oven and continue to bake for another 10 minutes or so,  depending on how crispy you like your wings to be
(I like mine browned with crispy skin!)

Enjoy! : )

Buffalo and BBQ Wings

Buffalo Wings:
2 lbs Chicken Wings
2-3 Tbsp ghee (may also use softened butter)
1/4 cup Organic Ketchup*
1 Tbsp garlic granules (can use garlic powder; both can be found in the bulk section at Whole Foods Market)
2 Tbsp hot sauce
Few pinches of Italian seasonings
Optional– 1 tsp paprika (adds color, and naturally high in Vitamin C)
Optionalparsley for topping

*Look at the ingredients on your ketchup! Most conventional versions are made with added sugars and High Fructose Corn Syrup. Organic brands are not necessarily free of these two ingredients!

Mix all ingredients (except the wings) in a large mixing bowl

Add the wings and mix
Wings will not be coated evenly; once the ghee/butter melts it will coat the wings more evenly

Spread the wings on an ungreased baking sheet (you may choose to line the baking sheet with foil for easier clean-up)

Bake at 425 for 10 minutes
Remove from the oven and flip/mix
Return to the oven and bake at 450 for 10-12 minutes

Remove from oven and enjoy!

BBQ Wings:
Find Keirsten’s Kitchen’s BBQ sauce recipe here!

Prepare the wings as directed, above, with the BBQ rather than the Buffalo mixture
Reapply the BBQ sauce when you remove the wings from the oven to flip

BBQ Sauce

1 Medium onion
Small handful of garlic cloves
1 Can organic tomato paste
1 Can diced tomatoes or tomato sauce
1/4 cup Apple cider vinegar
1-2 tsp Chili powder (depends on preference for spice)
5-6 Stalks of celery
1 Tbsp olive oil for cooking

Chop the onion, garlic and celery in a food processor
If you use diced tomatoes, blend those in the food processor as well
(You will end up mixing everything together, so you can do this all at once)

(*Pictured: onion)

Mix the blended onion, blended celery, blended garlic, the tomato paste and tomato sauce (or blended diced tomatoes) in a pot with a Tbsp of olive oil

Add the apple cider vinegar and chili powder, mix well

Cover and cook over medium heat, stirring often, for approximately 45 minutes

Use for chicken, pork, beef, etc. For BBQ sauce with more of a kick, add more chili powder or cayenne pepper, to taste
