Pumpkin Krunch

I’ve been using Steve’s PaleoKrunch for a variety of desserts. Yes, it says cereal on it- but that’s not all you can use it for! PaleoKrunch is gluten-free, grainless granola with clusters made from a delicious blend of coconut, raw pumpkin seeds, raw walnuts, raw pecans, raw almonds, raw sunflower seeds, a touch of honey and, of course, CINNAMON! You can find it, HERE.

This Thanksgiving/ fall-time treat was a hit at dinner last week for both adults and kids. And, it only took me about 10 minutes to make it. No cooking, no fancy kitchen appliances needed (just a blender or food processor, or even a hand blender would do!)

For this recipe, I used the Cinnamon Swirl Blend.


When I make this again, I want to try it slightly frozen. I imagine it will taste like crunchy pumpkin ice cream. If you try it- let me know how it turns out!

2 cups heavy whipping cream
1/4 cup pumpkin puree (make your own, instructions HERE, or canned will do)
2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground cloves
1 tsp ground ginger
(You can use 1 Tbsp pumpkin spice in lieu of the cinnamon, nutmeg, cloves and ginger)
2 Tbsp maple syrup
1 tsp vanilla
Approx 2 cups Cinnamon PaleoKrunch (about 1 package)

Whip the whipping cream in a blender or food processor for approximately 2-3 minutes
Add pumpkin, maple syrup and spices
Continue to whip until it is a whipped cream texture (about 4-5 minutes)
Refrigerate until ready to use


Spoon out whipped cream into dishes

Top with PaleoKrunch

Chicken Pizza Casserole

For me, the best part about pizza is the sauce, cheese and pepperoni! So why not just make a meal with those three ingredients, and throw in some organic pastured chicken thighs for some added protein? Kids love this dish, especially if you call it “Chicken Pizza Casserole!”

2 lbs. pastured chicken thighs (boneless are easier to use)
2 cups organic tomato sauce
(Any additional seasoning to add to tomato sauce- I used Italian seasonings and garlic powder)
A handful or so of sliced/chunked nitrate-free pepperoni
2 cups grated mozzarella cheese

Preheat oven to 400 F
Place chicken in a casserole dish large enough for single-layers of chicken thighs

Add pepperoni slices/chunks evenly over the chicken

Mix spices and tomato sauce together and pour over the chicken and pepperoni

tomato sauce, Italian seasonings and garlic for chicken pizza casserole

Ingredients for chicken pizza casserole

Spread the shredded mozzarella over the sauce

covered in cheese

Bake at 400 for approximately 45 minutes
