Pesto Chili

Ingredients:
1 lb grass-fed ground beef (or bison, venison, etc.)
1 large bunch fresh organic basil
1 green, orange, red or yellow bell pepper, sliced
1- 1 1/2 cups organic diced tomatoes
1- 1 1/2 cups organic tomato sauce
1-2 Tbsp chopped green chillies
5-6 fresh garlic cloves
1/2 onion, chopped
1/2 cup chopped fresh organic cilantro

Optional toppings: raw cheddar, avocado, cilantro

Cook the ground beef over medium heat
While it is cooking, add the chopped onion and bell pepper
Continue to stir

In a blender- blend the basil, garlic, diced tomatoes and chillies
Add this to the beef mixture
Add the tomato sauce
Continue to stir, reduce to low heat and cover

Pesto Chili on Stove

Continue to cook on low heat until all vegetables are at desired texture

Orange Sesame Wings

Ingredients:
2-3 lbs chicken wings
2-3 oranges, juiced
1 tsp red pepper flakes
1 tsp garlic granules
2 tsp sesame seeds
2 Tbsp coconut oil

Lay raw chicken wings in a single layer baking dish
Bake at 425 for 15 minutes

While the wings are baking, juice your oranges and remove any seeds
Add the red pepper flakes and garlic granules into a large mixing bowl
Mix well

Remove the wings from the oven and put into the mixing bowl with the orange mixture
Add the coconut oil
Stir around until the coconut oil is melted

Put the wings back into the same baking dish
Pour any leftover mixture over the wings
Sprinkle the wings with the sesame seeds

Continue to bake at 425 for another 15 minutes
Remove from oven and let sit for a few minutes before serving

Serve and enjoy!

Paleo Meatballs

Ingredients:
2 lbs Grass-fed ground beef
3 eggs
1/2 Medium onion, chopped
5-6 Garlic cloves, chopped
1/3-1/2 cup almond meal
1 tsp Black pepper
*Optional– 1/4 cup grated parmesan cheese
(I also used some frozen mixed peppers in this recipe, and just shopped them in the food processor)

Mix all ingredients together


Roll into balls and place in a baking dish


Bake at 400 for 20-30 minutes, depending on how big you make your meatballs

Eat as is, or add to your favorite sauce!

BBQ Pulled Chicken (Crockpot)

Ingredients:
2 cups BBQ sauce- recipe from Keirsten’s Kitchen here
3 lbs chicken thighs

Put chicken thighs in a crockpot on high heat

Add BBQ sauce and mix

Cook  for 6 hours, covered

(Picture: Approx 4 hours into cooking time…)


At 6 hours, take two forks and stab/pull chicken apart while in crock pot

As you pull the chicken apart, the entire dish will become thicker

Serve and enjoy!

Buffalo and BBQ Wings

Buffalo Wings:
2 lbs Chicken Wings
2-3 Tbsp ghee (may also use softened butter)
1/4 cup Organic Ketchup*
1 Tbsp garlic granules (can use garlic powder; both can be found in the bulk section at Whole Foods Market)
2 Tbsp hot sauce
Few pinches of Italian seasonings
Optional– 1 tsp paprika (adds color, and naturally high in Vitamin C)
Optionalparsley for topping

*Look at the ingredients on your ketchup! Most conventional versions are made with added sugars and High Fructose Corn Syrup. Organic brands are not necessarily free of these two ingredients!

Mix all ingredients (except the wings) in a large mixing bowl

Add the wings and mix
Wings will not be coated evenly; once the ghee/butter melts it will coat the wings more evenly

Spread the wings on an ungreased baking sheet (you may choose to line the baking sheet with foil for easier clean-up)

Bake at 425 for 10 minutes
Remove from the oven and flip/mix
Return to the oven and bake at 450 for 10-12 minutes

Remove from oven and enjoy!

BBQ Wings:

Prepare the wings as directed, above, with the BBQ rather than the Buffalo mixture
Reapply the BBQ sauce when you remove the wings from the oven to flip

Enjoy!

Pepperoni and Cheese Stuffed Mushroom Caps

Ingredients:
1 Quart whole mushrooms
2-3 oz of goat cheese (I like herb goat cheese, especially for this recipe)
Approximately 2-3 inches of a nitrate-free pepperoni stick

Remove the stem from the mushrooms, as pictured

Chop the pepperoni and mix well with the goat cheese
Will mix easier at room temperature

Stuff the mushrooms and place in a lightly-greased baking dish

Bake at 400 for 12-15 minutes
Enjoy!
