Cream of Vegetable Soup with Sausage Meatballs

Soup Ingredients:
1 cup heavy cream
3 apples, cubed
1-2 cups squash, cubed
1 red pepper, chopped or sliced
1 medium onion
2-3 cups broccoli (frozen ok)
2 Tbsp butter
small bunch of fresh sage
6-7 garlic cloves


Soup Instructions:
Cook all vegetables in a large pan with butter, over medium heat
Cover and allow vegetables to cook for approximately 20 minutes or until most vegetables begin to soften

Put the vegetables in a food processor or blender
Add heavy cream and blend

*Add any spices you want… I used chili pepper, garlic and black pepper

While the vegetables are cooking… begin to prepare the sausage meatballs

Sausage Ingredients:
2 lbs ground sausage *I buy sausages from Whole Foods and remove the casing
1 scallion, diced
Approx. 1/4 cup chopped green onion, chopped
1 apple, cubed
1 Tbsp Italian seasoning
6-7 garlic cloves, chopped


Sausage Instructions:
Mix all ingredients (except green onions- these are for topping) together and make into meatballs
Bake in a casserole dish at 425 for approximately 20-25 minutes

Serve bowls of soup; top with meatballs and green onions

Apple, Sage and Cranberry Sauce

1 apple, peeled and diced
1/2 cup cranberries
small bunch of sage, chopped
2 Tbsp butter 


Cover and cook all ingredients over medium heat until the apples are soft *Approx 12-15 minutes
Stir occasionally

Use as a topping for chicken or pork  

*Pictured- Sliced pork loin with sauce topping

Sausage and Apple-Stuffed Portobello

1 lb pork sausage (For this recipe, I used 4 garlic and herb pork sausage links from Whole Foods Market, and took it out of the casing)
1 shallot, chopped
Small bunch of fresh basil leaves, chopped
Small bunch of fresh sage leaves, chopped
1 apple, chopped into small pieces
4 Portobello mushroom caps

In a mixing bowl, mix the sausage with the chopped shallots

Add chopped basil and sage

Add chopped apple

Make sausage mixture into patties (like burgers)
Remove the stem from the Portobello mushroom caps
Place mushroom caps upside down/ bottom side-up in a lightly greased baking dish
Place sausage patties on top of mushroom caps

Bake at 400 for approximately 40 minutes

Paleo Apple Crisp

4 Apples
Variety of nuts to equal 2 cups (this recipe used almonds, Brazil nuts and hazelnuts)
2 tsp ground cinnamon
1 tsp ground nutmeg
1 Tbsp butter
1 Tbsp raw honey (or raw maple syrup)
2 spoonfuls almond butter 

Chop apples into small pieces
Place in baking dish

Add 1 Tbsp butter
Add cinnamon and nutmeg

Cover and bake at 400 for 12-15 minutes

While apples are baking, chop all nuts in a food processor

Be sure not to chop to a powder- leave some nuts in larger pieces
Add almond butter and honey, mix well

Remove apples from oven and stir
Spread almond butter mixture over the apples, one spoonful at a time
(Mixture will not spread easily- more of a plop than a “spread”)
Return to the oven
Bake at 400 for 10-12 minutes, or until the almond butter mixture starts to brown a bit on the top
Remove from oven and serve
